I know what you mean. I wasn't able to get Finale to run usably
with WINE until I'd done some font installation...
The foreign language HOWTOs give a pretty good idea of what to do
to get X fonts working.
The main trick is to have a fonts.dir and fonts.scale file in the
directory that has your fonts in it. For PCF, SNF, and BDF fonts, you can
use the mkfontdir program to take care of that; for Type1 fonts (e.g.,
TrueType fonts), the tool to use is type1inst, which you'll probably have
to download (while you'll almost certainly have mkfontdir already.)
Out of curiosity, what versions of Office and WINE are you using?
I have Office 7.0/95 and wine981108, and I can get Excel to run (though I
haven't banged on it too hard yet), but Word crashes.
Not that it matters too much. I've been quite happy with
StarOffice for all my office suite needs - and the most recent version
will read files from Office 97 and earlier. http://www.stardivision.com
(Well, that and a GUI frontend to LaTeX for problem sets - it
takes less time.)
