A Connecticut native, Dana comes to Yale Cabaret with 23 years of experience and a vast knowledge of the restaurant industry. Throughout his career, he has been the Head Chef and Manager at numerous respected restaurants in Fairfield County. At the age of 34, he decided to hone his craft and refine his technique by enrolling at The Center for Culinary Arts, the only accredited culinary school in Connecticut. While in school, Dana was Head Chef at the Field Restaurant, in Black Rock, CT and later, the Executive Chef at Ralph & Rich’s Restaurant in Bridgeport, CT. Here the menu consisted of authentic Italian cuisine with his own Mediterranean twist, which placed them in the top three Italian restaurants in Fairfield County. Dana is thrilled to now be at Yale Cabaret and hopes to introduce its audiences to his creative flair. |
